Preparation

First, we wash the potatoes thoroughly and boil them in salted water until they are tender. Then, we peel them and slice them into uniform rounds.

For the dressing, finely dice the onion and mix in a bowl with the warm vegetable broth, vinegar, mustard, and part of the oil.

Now, carefully add the warm potato slices to the dressing. A little cat-tip: the potatoes absorb the broth's flavor best when they are still slightly warm!
