I personally take care to use only the zest of an untreated lemon, as this is where most of the essential oils that unfold the full fragrance are located. Spaghetti

Preparation

First, bring a pot of water to a boil, add the sea salt, and cook the spaghetti al dente, just as it should be in real Italian cuisine.

While the pasta is cooking, wash the lemon with hot water. Carefully zest the yellow skin and squeeze the juice. Peel and finely chop the garlic – watch your paws, it's sharp!

Heat the olive oil in a pan over medium heat and sauté the chopped garlic briefly until it smells wonderful, but don't let it brown. A little tip: if it gets too hot, the garlic becomes bitter!

Add the lemon juice and lemon zest directly to the pan with the garlic oil.

As soon as the spaghetti are done, take them directly from the water and add them dripping wet to the pan with the lemon sauce.

Now for the creaminess: sprinkle the freshly grated parmesan over it and toss everything vigorously until the sauce adheres perfectly to the pasta. If it seems too dry, simply add a small splash of pasta water.

Finally, season with black pepper and serve the Dry Limoni immediately while it still smells glorious.
