Ingredients
Preparation
First, boil the waxy potatoes in their skins in salted water until tender, then let them cool briefly, peel, and slice into thin rounds.
While the potatoes are cooking, wash the cucumber, shave it finely or cut into thin slices – a little paw-tip: If you salt the cucumber beforehand and let it sit, the salad will be extra crisp!
For the dressing, whisk together the warm vegetable broth, white wine vinegar, mustard, rapeseed oil, sugar, salt, and black pepper in a small bowl.
Now, gently mix the sliced potatoes and cucumber in a bowl and pour the dressing over them.
Finally, fold in the finely chopped fresh dill and let the salad marinate for 30 minutes so that the flavors can fully develop.
