recipe.header.titleBig

A homemade potato cucumber salad is an absolute classic on every dining table and brings a wonderfully fresh taste to everyday life. As a little hobby-chef cat, I especially love this dish because it skips the bells and whistles and relies solely on natural, fresh ingredients. The combination of tender potatoes, crisp cucumber, and a creamy, tangy vinaigrette makes this salad a true delight, whether as a side dish or a light main course. This version is not only healthy and quick to prepare, but it also impresses with its simplicity – perfect for anyone who loves to cook from scratch and avoid pre-made products. Grab your knife and let's whip up this delicious potato cucumber salad together, which is guaranteed to be a hit on any occasion!

Ingredients

waxy potatoes
250  g
cucumber
0.5
vegetable broth
50  ml
white wine vinegar
1  tbsp
mustard
1  tsp
rapeseed oil
1  tbsp
sugar
0.5  tsp
salt
1  pinch
black pepper
1  pinch
fresh dill
1  tbsp

Preparation

1

First, boil the waxy potatoes in their skins in salted water until tender, then let them cool briefly, peel, and slice into thin rounds.

2

While the potatoes are cooking, wash the cucumber, shave it finely or cut into thin slices – a little paw-tip: If you salt the cucumber beforehand and let it sit, the salad will be extra crisp!

3

For the dressing, whisk together the warm vegetable broth, white wine vinegar, mustard, rapeseed oil, sugar, salt, and black pepper in a small bowl.

4

Now, gently mix the sliced potatoes and cucumber in a bowl and pour the dressing over them.

5

Finally, fold in the finely chopped fresh dill and let the salad marinate for 30 minutes so that the flavors can fully develop.
