large waxy potato

low-fat quark
150  g
sparkling mineral water
20  ml
fresh herbs (chives, parsley)

olive oil

Preparation

First, preheat your oven to 200°C (top/bottom heat) so the heat can evenly penetrate the large waxy potato.

Wash the potato thoroughly and dry it well. Pierce it several times with a fork so the steam can escape during baking.

Drizzle the potato with olive oil, rub it with a pinch of salt, and wrap it tightly in aluminum foil. Put it in the oven for about 50 to 60 minutes – this makes it wonderfully soft!

While the potato is roasting in the oven, prepare the quark: Stir the low-fat quark with the mineral water until it is nice and creamy – that's my secret tip for the perfect consistency!

Wash the fresh herbs, chop them finely, and stir them into the quark. Season to taste with the remaining salt and black pepper.
