First, mix the lukewarm water, dry yeast, and sugar in a small bowl and let it sit for about 5 minutes until it froths slightly – this activates the yeast, meow!
Now, add the wheat flour, olive oil, and salt to a large mixing bowl and add the yeast mixture.
Time to knead! Work the dough for about 10 minutes by hand or with a food processor until it is nice, smooth, and no longer sticks to your fingers.
Cover the bowl with a clean cloth and let the dough rise in a warm place for about 60 minutes until it has doubled in volume.
Preheat your oven to 230 degrees Celsius (top/bottom heat) and put a baking tray inside so it gets really hot – that's my little secret trick for perfect flatbreads!
Divide the risen dough into 2 equal pieces and roll them out on a floured surface to about 0.5 cm thickness into round flatbreads.
Place the flatbreads carefully onto the hot baking tray and bake them for about 5 to 7 minutes until they have puffed up and turned a golden-brown color.
