Crispy Oven-Baked Chicken with Mediterranean Vegetables - Easy & Quick

recipe.header.titleBig

A juicy, crispy oven-baked chicken with colorful roasted vegetables is just what you need when you want something healthy, quick, and incredibly delicious after a long day. As a little kitchen cat, I especially love this dish because all ingredients cook together on one tray – it saves on washing up and lets the flavors meld beautifully. The combination of tender chicken, aromatic olive oil, and crisp, fresh vegetables makes this a wholesome meal without processed products. It's child's play to prepare: just chop, season, and let the oven do the rest. Perfect for anyone looking for quick after-work cooking without compromising on quality. Try it out, you'll love the golden-brown crust and the juicy interior just as much as I do!

Ingredients

Chicken breast fillet
200  g
Bell pepper
1
Zucchini
1
Red onion
1
Olive oil
2  tbsp
Paprika powder
1  tsp
Dried oregano
1  tsp
Salt
1  pinch
Black pepper
1  pinch

Preparation

1

Preheat your oven to 200 degrees (top/bottom heat) – this ensures perfect crispiness!

2

Wash the chicken breast fillet thoroughly under cold water, pat it dry, and cut it into bite-sized pieces. Purr!

3

Wash the bell pepper and the zucchini, and cut both into coarse cubes. Peel the red onion and cut it into strips as well.

4

Now, place the meat and the cut vegetables together in a bowl and drizzle with olive oil.

5

Now for the seasoning: Sprinkle the paprika powder, oregano, salt, and a pinch of black pepper over it and mix everything well with your hands until every ingredient is evenly marinated.

6

Spread the mixture on a baking tray lined with parchment paper and put it in the oven for about 20-25 minutes until the chicken is golden brown and cooked through.
