Naked Cake with fresh berries - Simple & Festive

A Naked Cake with fresh berries is the perfect choice for anyone who loves an elegant yet uncomplicated cake. The Naked Cake, where the edges are not completely covered with cream, impresses with its rustic charm and the view of the juicy cake layers. As a hobby baker, I love this trend because it requires no elaborate frosting and still looks like a professional creation. The combination of fluffy sponge, a creamy filling of quark and whipped cream, and a handful of colorful berries makes this dessert a highlight on any coffee table. Whether for a birthday, a celebration, or just to treat yourself – this recipe is guaranteed to be easy. Without any pre-made products, you will conjure up a cake that not only looks fantastic but also tastes wonderfully light. Grab your whisk and let's bake together while we enjoy the scent of fresh pastries!
Ingredients
Preparation
Preheat the oven to 180 degrees (top/bottom heat). Beat the eggs with the sugar for about 5 minutes until the mixture is light and thick – a little trick of mine: patience while beating makes the dough extra fluffy!
Carefully fold in the flour and cornstarch so the air doesn't escape.
Pour the dough into a small cake tin (approx. 16 cm diameter) and bake the base for approx. 20 minutes. Let it cool well before cutting it horizontally into two layers.
For the cream, whip the cream with the vanilla sugar until stiff and then fold in the low-fat quark.
Spread the first layer with a layer of cream and distribute a few berries on top. Place the second layer on top and spread the remaining cream over the top of the cake.
Finally, decorate the Naked Cake with the remaining berries – we eat with our eyes, after all, meow!
