Crispy Air-Fryer Tortellini Salad - Fast & Vegetarian

recipe.header.titleBig

A crispy tortellini salad from the air fryer is exactly what you need when you crave something special! As a little kitchen cat named Mila, I love it when my favorite pasta gets a golden-brown, wonderfully crispy crust instead of being boiled. This Italian-inspired salad shines with the combination of savory, air-fried tortellini, crunchy vegetables, and a delicious creamy dressing. It's lightning-fast to make, wonderfully healthy, and a real highlight for those who love variety. Whether as a quick lunch or a creative snack – this recipe is foolproof. Grab your fresh ingredients, fire up the air fryer, and enjoy this salad that is an absolute feast both visually and in taste. Meow-tasticly delicious and so easy to make, completely without pre-packaged products!

Ingredients

Refrigerated tortellini
125  g
Cherry tomatoes
6
Mini cucumber
1
Olive oil
10  ml
Greek yogurt
50  g
Lemon juice
5  ml
Fresh basil
5  g
Salt
2  g
Black pepper
1  g

Preparation

1

First, preheat the air fryer to 200 degrees so the tortellini become nice and crispy later.

2

Place the tortellini in a bowl and mix with the olive oil and a pinch of salt until evenly coated.

3

Now put the tortellini in the air fryer for about 8 to 10 minutes until they are golden brown and wonderfully crispy – it smells almost as good as fish food!

4

While the pasta is roasting, halve the cherry tomatoes and dice the mini cucumber.

5

For the dressing, stir the Greek yogurt with the lemon juice, a little salt, and black pepper in a small bowl until smooth.

6

Finely chop the fresh basil and fold it into the dressing.

7

Finally, let the crispy tortellini cool briefly, then mix with the vegetables and the dressing. Enjoy your meal!
