Ingredients

waxy potatoes
250  g
cucumber
0.5
red onion
0.5
vegetable broth
100  ml
white wine vinegar
20  ml
rapeseed oil
20  ml
mustard
10  g
sugar
5  g
salt
5  g
black pepper
2  g
fresh dill
10  g

Preparation

1

First, wash the waxy potatoes thoroughly and boil them in a pot of water until they are soft but still firm to the bite. Then drain, let cool briefly, peel, and cut into thin slices.

2

While the potatoes are cooking, you can wash, halve, and slice the cucumber. Finely dice the red onion – make sure the pieces are small so they don't dominate the dressing later.

3

For the dressing, mix the hot vegetable broth with the white wine vinegar, rapeseed oil, mustard, sugar, salt, and black pepper in a small bowl until everything is well combined.

4

Now place the potato slices, cucumber slices, and diced onion in a large bowl and pour the still-warm dressing over them. Mix everything carefully so the potatoes don't crush – a cat has to be very gentle here!

5

Finally, finely chop the fresh dill and fold it into the salad. It is best to let the salad rest for about 15 minutes so all flavors can wonderfully unfold. Enjoy your meal!
