First, wash the flat-leaf parsley thoroughly, shake dry, and chop the leaves very finely – ensure it is really fine so that the flavors can develop.
Now peel the garlic clove and dice it very finely, while you remove the seeds from the chili pepper and chop it into tiny pieces as well.
Mix the olive oil and red wine vinegar in a small bowl to form a fine emulsion.
Add the chopped herbs, garlic, and chili to the liquid and stir everything well.
Finally, season your sauce with a pinch of salt and some black pepper.
