Preparation
First, peel the onion (1) and the garlic clove (1) and dice both very finely – this is important for the aroma, meow!
Heat the olive oil (1 tbsp) in a small pot and sauté the onion and garlic cubes until translucent.
Add the curry powder (1 tsp) briefly to the pot so the fine spice aromas can fully unfold.
Now add the red lentils (80 g), which you have rinsed briefly under cold water beforehand.
Deglaze everything with the coconut milk (200 ml) and the vegetable broth (150 ml).
Let everything simmer for about 15 minutes over medium heat until the lentils are soft and have reached a creamy consistency – stir occasionally so nothing sticks to the bottom!
