Vegan Potato Goulash with Bell Peppers - Hearty & Quick

recipe.header.titleBig

A delicious, vegan potato goulash with bell peppers is just the thing when hunger strikes after a long day and you need something truly warming. As a hobby cook with a nose for good flavors, I love this dish because it’s simple, tastes wonderfully rustic, and is incredibly satisfying. The combination of hearty potato pieces and firm bell pepper strips, refined with a strong note of paprika powder, is reminiscent of traditional Hungarian cuisine but completely plant-based. It's real soul food that you can whip up in your own pot in no time. Since I don't like convenience products, we rely entirely on fresh ingredients that allow their full flavor to unfold. This dish is so simple that anyone can master it perfectly – whether you are a beginner or a pro. The preparation is straightforward, healthy, and adds a great splash of color to the plate. Grab your knife and let's conjure up something in the kitchen so you can treat yourself to a portion of pure happiness. You will see how easy plant-based cooking can be when you choose the right spices and fresh vegetables.

Ingredients

Potato
3
Onion
1
Bell pepper
1
Tomato paste
1  tbsp
Vegetable broth
200  ml
Sweet paprika powder
1  tsp
Olive oil
1  tbsp

Preparation

1

First, peel the potato (3) and cut it into bite-sized cubes so they become wonderfully soft later.

2

Finely dice the onion (1) and cut the bell pepper (1) into strips – make sure everything is evenly sized.

3

Heat the olive oil (1 tbsp) in a pot and sauté the onion until translucent.

4

Now briefly roast the tomato paste (1 tbsp) and the sweet paprika powder (1 tsp) to draw out the full color and flavor.

5

Add the potato (3) and the bell pepper (1) and toss briefly.

6

Pour in the vegetable broth (200 ml), cover with a lid, and let everything simmer gently for about 20 minutes until the vegetables are perfectly cooked.
