First, peel the potato (3) and cut it into bite-sized cubes so they become wonderfully soft later.
Finely dice the onion (1) and cut the bell pepper (1) into strips – make sure everything is evenly sized.
Heat the olive oil (1 tbsp) in a pot and sauté the onion until translucent.
Now briefly roast the tomato paste (1 tbsp) and the sweet paprika powder (1 tsp) to draw out the full color and flavor.
Add the potato (3) and the bell pepper (1) and toss briefly.
Pour in the vegetable broth (200 ml), cover with a lid, and let everything simmer gently for about 20 minutes until the vegetables are perfectly cooked.
