

Vegan Bowls with Quinoa and Tofu Croutons - Healthy & Protein-Rich

I consciously avoid processed products, because nothing beats the aroma of freshly prepared ingredients. Preparation
First, rinse the quinoa (80 g) thoroughly under cold water and cook in double the amount of water for about 15 minutes, until the liquid is completely absorbed.
While the quinoa is cooking, cut the firm tofu (150 g) into small, uniform cubes that will get really nice and crispy later – these are my delicious tofu croutons!
Heat some olive oil (2 tbsp) in a pan and sear the tofu cubes until golden brown on all sides, then deglaze with soy sauce (1 tbsp), toss briefly, and remove from heat.
Now prepare the fresh vegetables: Halve the avocado (1), remove the pit, and cut into fine slices, halve the cherry tomatoes (5), and dice the cucumber (0.5) into small pieces.
To serve, place the cooked quinoa in a nice bowl and decoratively arrange the prepared vegetables and the crispy tofu croutons on top – meow, looks good!
