Preheat the oven to 200 degrees and cut two thick slices from the middle of the cauliflower (1).
Brush the cauliflower (1) slices with a portion of the olive oil (30 ml), season with salt, and bake in the oven for 25 minutes until golden brown.
Meanwhile, finely chop the flat-leaf parsley (1 bunch) and place it in a small bowl.
Finely dice the garlic clove (1) and add it to the parsley along with the chili flakes (1 tsp).
Stir in the remaining olive oil (30 ml) and the white wine vinegar (10 ml) into the herb mixture until a fresh chimichurri is formed.
Remove the finished cauliflower (1) steak from the oven and drizzle generously with the homemade chimichurri.
