Ingredients
Preparation
First, finely dice the onion (1) and slice the carrot (1) into small rounds.
Heat the rapeseed oil (10 ml) in a pot and sauté the onions and carrots until they are fragrant.
Add the tomato paste (20 g) and roast briefly to develop the full flavor.
Add the mountain lentils (80 g) to the pot and pour in the vegetable broth (250 ml). Let it simmer gently for about 20 minutes until the lentils are cooked.
Meanwhile, prepare the quick spätzle: Mix the spelt flour (100 g) with water (50 ml) and a pinch of salt to form a stiff dough.
Press the dough through a spätzle press or use a scraper into boiling salted water. As soon as they float to the top, they are ready.
Drain the finished spätzle and fold them into the shepherd's goulash. Enjoy your meal, my foodies!
