Wash the vegetables thoroughly and cut the carrot (1), the red bell pepper (0.5), and the cucumber (0.25) into very fine, even strips. This is important so the rolls don't tear later, meow!
For the dip, mix the peanut butter (30 g) with the soy sauce (1 tbsp), fresh lime juice (1 tbsp), and warm water (30 ml) in a small bowl until a wonderfully creamy consistency is formed.
Place a sheet of rice paper (4) briefly in a shallow dish with lukewarm water until it becomes pliable, and lay it carefully on a board.
Place a small portion of the vegetables in the middle of the lower third of the paper.
Fold the sides of the rice paper (4) inward and roll it up tightly from bottom to top.
Repeat the process with the remaining rice paper (4) and serve the finished rolls immediately with the delicious dip.
