First, finely dice the onion (1), the carrot (1), and the celery (1) – make sure they are all roughly the same size for a better look!
Heat the olive oil (1 tbsp) in a pot and sauté the vegetables until fragrant.
Now briefly roast the tomato paste (1 tbsp) to fully develop its rich flavors.
Pour in the vegetable broth (400 ml) and add the chopped tomatoes (200 g) as well as the thyme (1 tsp).
Let everything simmer for about 10 minutes before folding in the white beans (200 g) and letting them heat through for another 5 minutes.
