For the dough, knead the flour (150 g) with one egg (1) and a splash of water into a smooth dough and let it rest briefly.
Briefly blanch the spinach (100 g), squeeze out excess water, and chop finely, then mix with ricotta (50 g) and a pinch of nutmeg (1 pinch) in a bowl to create a creamy mixture.
Finely dice the onion (1), sauté until translucent in a pan, and fold into the spinach mixture.
Roll out the dough thinly, distribute the filling on top, roll it up, and cut into equal-sized pieces.
Bring the vegetable broth (500 ml) to a boil in a pot and let the Maultaschen simmer in it for about 10 minutes until they float to the surface.
