For the dough, knead flour (150 g), olive oil (1 tbsp), water (80 ml), and salt (1 pinch) in a bowl until smooth and let it rest for a short while.
Preheat the oven to 220 degrees Celsius and roll out the dough very thinly on a floured surface.
Cut the onion (1) into paper-thin rings.
Spread the rolled-out dough evenly with crème fraîche (100 g).
Slice the goat cheese (80 g) and distribute it along with the onion rings (1) over the tarte flambée.
Bake the tarte flambée for about 12 to 15 minutes until golden brown and the edges are beautifully crispy.
After baking, decoratively drizzle the honey (1 tbsp) over the warm goat cheese and enjoy immediately.
