Vegetarian Pasta Salad with Mozzarella Balls - Simple & Quick

recipe.header.titleBig

A colorful vegetarian pasta salad with mozzarella balls is exactly what you need when you're craving a fresh and healthy meal that's ready in no time. As a hobby chef, I love combining high-quality, fresh ingredients instead of relying on pre-made products. This Mediterranean-inspired salad wins you over with the perfect balance of al dente pasta, creamy mozzarella balls, and crunchy vegetables. The homemade vinaigrette gives the dish a wonderful lightness, perfect for a quick lunch or as a highlight at a barbecue. The best part? The preparation is so simple that anyone – beginner or pro – can whip up this treat in a flash. Grab your bowl and let's prepare this delicious creation together, which not only looks colorful but also tastes fantastic. Meow, my mouth is watering just thinking about it!

Ingredients

Penne pasta
100  g
Mini mozzarella balls
100  g
Cherry tomatoes
5
Cucumber
0.5
Olive oil
2  EL
Balsamic vinegar
1  EL
Fresh basil
5  leaves

Preparation

1

Cook the penne pasta (100 g) in plenty of salted water until al dente, then drain and rinse briefly with cold water – this prevents them from sticking together, meow!

2

While the pasta cools down, halve the cherry tomatoes (5) and dice the half cucumber (0.5) finely.

3

For the dressing, whisk the olive oil (2 EL) and balsamic vinegar (1 EL) well in a small bowl until a nice emulsion forms.

4

Now mix the cooled pasta (100 g) with the prepared vegetables in a bowl.

5

Gently fold the mini mozzarella balls (100 g) into the salad so they remain intact.

6

Finally, pour the dressing over everything, sprinkle with the finely chopped fresh basil (5 leaves) – and your Mediterranean treat is ready!
