Ingredients

Green spelt meal
60  g
Onion

Tomato paste

Strained tomatoes
200  ml
Vegetable broth
150  ml
Dried herbs de Provence
1  tsp

Preparation

First, dry toast the green spelt meal (60 g) in a pan without fat until it smells wonderfully nutty – watch out gently that it doesn't burn!

Meanwhile, finely dice the onion (1), the carrot (1), and the celery (1).

Heat the olive oil (2 tbsp) in the pan and gently sauté the vegetables over medium heat until translucent.

Now add the tomato paste (1 tbsp) and toast briefly to really awaken the flavors.

Mix the toasted green spelt meal (60 g) in with the vegetables.

Pour in the strained tomatoes (200 ml) and the vegetable broth (150 ml), stir everything well, and fold in the herbs de Provence (1 tsp).

Let it simmer over low heat for about 15 minutes until the green spelt is soft but still has a bite – in the meantime, you can relax and purr!
