recipe.header.titleBig

A homemade vegetarian goulash with potatoes and sour cream is the ultimate comfort food that not only warms you up but also makes you happy! As a little hobby cook with paws, I love how the bold aromas of fresh vegetables and premium paprika powder blend together. This quick, vegetarian dish doesn't use any pre-made products and relies on honest, fresh ingredients. The combination of savory potatoes and the creamy note of the sour cream is simply unbeatable and provides a great texture. It is incredibly easy to prepare and perfect when you want something healthy and hearty on your plate after a long day. Grab your wooden spoon – even if you don't have paws like me – and conjure up this delicious goulash that is guaranteed to soothe your soul. You have to try it, because homemade simply tastes best!

Ingredients

Potatoes
300  g
Onion
1
Bell pepper
1
Vegetable broth
200  ml
Sour cream
50  g
Paprika powder
1  tbsp
Olive oil
1  tbsp

Preparation

1

First, peel the potatoes (300 g) and cut them into bite-sized, small cubes – this is wonderful and fast!

2

Finely dice the onion (1) and slice the bell pepper (1) into strips.

3

Heat the olive oil (1 tbsp) in a pot and sauté the onions until translucent and fragrant.

4

Now, briefly roast the paprika powder (1 tbsp) with the onions to unfold the full aroma – but be careful not to burn it, otherwise it will become bitter, meow!

5

Add the potatoes (300 g) and the bell pepper (1), then carefully deglaze everything with the vegetable broth (200 ml).

6

Simmer everything over medium heat until the potatoes (300 g) are nice and soft.

7

Finally, remove the pot from the heat and stir in the fresh sour cream (50 g) to give the goulash the perfect creamy consistency.
