Vegetarian Gnocchi Skillet with Cherry Tomatoes - Simple & Fast

This vegetarian gnocchi skillet with cherry tomatoes is my absolute favorite dish when I need something savory after a long day of cat naps that comes to the table in a flash. The combination of soft potato gnocchi, pan-fried to a wonderful golden brown, and sweet, aromatic cherry tomatoes that burst gently in their own juice is simply irresistible. As a hobby chef, I place great importance on avoiding convenience foods and using fresh, high-quality ingredients instead. This healthy skillet dish is not only super delicious but also incredibly easy to prepare. You'll see how the Mediterranean flavors of fresh garlic and fragrant basil transform your kitchen into an Italian trattoria. It's the perfect soul food for one person, showing that healthy cooking doesn't have to be complicated or time-consuming. Grab your pan, swing the wooden spoon, and let yourself be enchanted by this Mediterranean taste experience – meow!
Ingredients
Preparation
First, wash and halve the cherry tomatoes (150). Finely chop the garlic (1).
Heat the olive oil (20 ml) in a non-stick pan and sauté the gnocchi (250 g) over medium heat until golden brown all over.
Now add the garlic (1) to the gnocchi (250 g) and sauté briefly until it smells wonderful – but be careful not to let it get too dark, otherwise it will become bitter, meow!
Add the halved cherry tomatoes (150) to the pan and toss for about 5 minutes until they become slightly soft and release their juices.
Finally, roughly chop the fresh basil (10 g) and sprinkle it over the gnocchi skillet together with the freshly grated Parmesan (20 g) and serve immediately.
