Vegetarian Quesadillas with Corn and Cheese - Simple & Quick

recipe.header.titleBig

Vegetarian quesadillas with corn and cheese are my absolute favorite when I need something quick but still delicious. As a little kitchen cat, I love creating a wonderful flavor experience with just a few high-quality ingredients. These crispy tortillas come straight from Mexican cuisine and are perfect as a quick snack or a light lunch. The combination of creamy melted cheese, crunchy sweet corn, and a savory note makes this dish irresistible. Without any pre-made products and prepared with love, the recipe is super easy to follow. Grab your pan and let's whip up this savory treat together – meow, this will be fantastic!

Ingredients

Wheat tortilla
2
Corn
100  g
Cheddar cheese
80  g
Spring onion
1
Olive oil
1  tbsp

Preparation

1

Cut the spring onion (1) into fine rings to add a nice crunch to the quesadilla.

2

Grate the cheddar cheese (80 g) coarsely so that it melts evenly and creamy in the pan.

3

Place a wheat tortilla (2) flat on the work surface and spread half of the grated cheese (80 g), the corn (100 g), and the spring onions (1) on top.

4

Place the second wheat tortilla (2) on top like a lid and press down lightly to keep everything in place.

5

Heat the olive oil (1 tbsp) in a pan over medium heat and carefully place the quesadilla inside.

6

Fry on both sides for about 3 minutes until golden brown, until the cheese (80 g) has beautifully melted – turn carefully once so nothing falls out!
