These crispy tortillas come straight from Mexican cuisine and are perfect as a quick snack or a light lunch. Cut the spring onion (1) into fine rings to add a nice crunch to the quesadilla.
Grate the cheddar cheese (80 g) coarsely so that it melts evenly and creamy in the pan.
Place a wheat tortilla (2) flat on the work surface and spread half of the grated cheese (80 g), the corn (100 g), and the spring onions (1) on top.
Place the second wheat tortilla (2) on top like a lid and press down lightly to keep everything in place.
Heat the olive oil (1 tbsp) in a pan over medium heat and carefully place the quesadilla inside.
Fry on both sides for about 3 minutes until golden brown, until the cheese (80 g) has beautifully melted – turn carefully once so nothing falls out!
