

Vegetarian Red Lentil Dal - Simple & Aromatic Soul Food

This vegetarian red lentil dal with yogurt dip is my absolute favorite dish when I crave a sense of comfort. As a hobby cook with a fine nose for spices, I love this Indian-inspired delight because it is not only wonderfully creamy and healthy, but also incredibly quick to make. First, finely dice the onion (1) and the garlic clove (1) so they can gently sauté in the oil later.
Heat the olive oil (1 tbsp) in a pot and sauté the onion and garlic cubes until translucent – it smells wonderful!
Now briefly sauté the tomato paste (1 tbsp) and the turmeric (0.5 tsp) to awaken the full range of flavors.
Rinse the red lentils (100 g) thoroughly, add them to the pot along with the vegetable broth (300 ml), and let simmer for about 15 minutes until they are soft.
While the lentils are simmering, mix the Greek yogurt (100 g) with the finely chopped mint (5 g) to create a delightfully refreshing dip.
Stir the finished dal briefly and serve with a large dollop of the cool mint yogurt – enjoy your meal!
