Wash the leaf spinach (250 g) thoroughly, let it wilt in a pan, and squeeze out the excess water – a little tip from me: it tastes much better in the dough when dry!

Finely chop the garlic clove (1) and fold it into the squeezed spinach.

Crumble the feta (100 g) into a bowl and mix it together with the egg (1) into the spinach mixture to ensure a good binding.

Carefully lay out the strudel dough sheets (2) and brush them with some olive oil (20 ml) so they become wonderfully crispy in the oven later.

Spread the spinach-feta mixture evenly over the dough sheets, leaving some space at the edges.

Carefully roll the dough into a firm roll and place it on a baking sheet.
