Crispy Summer Salad with Strawberries and Feta - Refreshing & Simple

recipe.header.titleBig

This crispy summer salad with strawberries and feta is the perfect companion for hot days when you want something light, healthy, and incredibly quick to make. As a hobby chef with a penchant for the combination of sweet and salty, I love this salad because it not only looks fantastic but also shines with the freshness of the crisp ingredients. Strawberries meet tangy cheese and a fine vinaigrette – a true flavor explosion that anyone can whip up in no time. This dish is ideal for conscious eating, as we avoid store-bought dressings and use high-quality olive oil and real balsamic vinegar instead. Whether as a quick lunch or a colorful side dish, this salad brings summer vibes straight to your plate. Grab your cutting board, clean the fresh strawberries, and let's get creative in the kitchen together. It's child's play, I promise – and if a little cat like me can do it, you can do it in your sleep! Try it out and enjoy the fruity note combined with the creamy feta.

Ingredients

Strawberries
150  g
Feta
100  g
Arugula
50  g
Walnut kernels
20  g
Olive oil
15  ml
Balsamic vinegar
10  ml
Honey
5  g

Preparation

1

Thoroughly wash the arugula (50 g), spin dry, and place in a large bowl.

2

Wash the fresh strawberries (150 g), remove the green stems, and slice into bite-sized pieces.

3

Carefully crumble the tangy feta (100 g) with your hands into large chunks.

4

For the dressing, whisk the olive oil (15 ml), balsamic vinegar (10 ml), and honey (5 g) vigorously in a small cup with a fork until a creamy emulsion forms – meow, that looks great!

5

Arrange the strawberries (150 g) and feta (100 g) on top of the arugula (50 g).

6

Coarsely chop the walnut kernels (20 g) and add them to the salad along with the dressing.

7

Mix everything gently and enjoy immediately while it is still wonderfully crispy.
