Asian Glass Noodle Salad with Peanut Dressing - Fresh & Fast

recipe.header.titleBig

A wonderful Asian glass noodle salad with peanut dressing is just the thing when you're in the mood for a healthy, aromatic, and lightning-fast meal. As a hobby cook, I love the combination of crunchy vegetables and the creamy, nutty note that makes this salad a real highlight. The delicate glass noodles absorb the dressing perfectly, making the dish wonderfully light – ideal for hot days or as a quick after-work meal that doesn't rely on ready-made products. All you need are fresh ingredients from your pantry and a little love during preparation. I'll show you how to easily conjure up this exotic delight at home. Grab your bowl and let's purr in the kitchen together as we plate this colorful salad. It's not only healthy and full of vitamins, but also brings a touch of the Far East to your plate. It's so much fun to process the fresh ingredients, and the result tastes simply heavenly. Try it out and be convinced by its freshness!

Ingredients

Glass noodles
50  g
Carrot
1
Cucumber
0.5
Peanut butter
30  g
Soy sauce
15  ml
Lime juice
10  ml
Water
20  ml

Preparation

1

Pour boiling water over the glass noodles (50 g), let them steep for five minutes, and then rinse with cold water – this prevents them from sticking together.

2

Meanwhile, cut the carrot (1) into fine strips and finely dice or slice the cucumber (0.5).

3

For the creamy dressing, stir the peanut butter (30 g) in a small bowl with the soy sauce (15 ml), fresh lime juice (10 ml), and water (20 ml) until smooth.

4

Now mix the noodles with the vegetables in a bowl and generously pour the peanut dressing over them before tossing well.
