Bring the vegetable broth (120 ml) to a boil and let the couscous (80 g) swell in it for about 5 minutes while I quickly clean my paws.
Halve the pomegranate (0.5) and carefully remove the seeds so they don't get crushed.
Dice the cucumber (0.5) into small, fine cubes and finely chop the mint (5 g).
Fluff up the swollen couscous with a fork and mix in the olive oil (1 tbsp) and the juice of the lemon (0.5).
Finally, fold the cucumber cubes, fresh mint, and the bright pomegranate seeds into the salad and enjoy.
