Cook the mountain lentils (80 g) in plenty of water according to the package instructions until al dente, then drain well in a sieve.
While the lentils are cooling, wash the carrot (1) thoroughly, peel it, and grate it finely.
For the dressing, vigorously whisk the olive oil (2 tbsp), apple cider vinegar (1 tbsp), mustard (1 tsp), and a pinch of salt (1 pinch) in a small bowl until a creamy emulsion forms.
