Wash the beetroot (2) thoroughly, boil until soft, peel, and cut into small, fine cubes.
Cut the matjes herring fillet (150 g) into bite-sized pieces with a sharp knife, checking for any small bones.
Cut the pickle (1) and the apple (1) into small cubes as well – this adds a great crunch to the salad!
Finely dice the onion (0.5) and finely chop the dill (1 bunch) for a fresh note.
In a bowl, stir the sour cream (50 g) until smooth with a little of the pickle brine and gently fold in all the prepared ingredients.
Let the salad marinate briefly so the flavors can perfectly combine while I clean my paws.
