Preheat the oven to 200°C (top/bottom heat), as we need high heat for the perfect flavor.
Cut the sweet potato (1) into even, bite-sized cubes so they cook through at the same time.
Mix the sweet potato (1) on a baking sheet lined with parchment paper with the olive oil (15 ml) and a pinch of sea salt (2 g).
Slide the tray into the oven for about 20 to 25 minutes until the cubes are beautifully crispy on the outside and soft on the inside.
Meanwhile, whisk the tahini (30 g) with the lemon juice (0.5) and water (20 ml) in a small bowl until you have a creamy sauce – make sure it is smooth.
Remove the sweet potato (1) from the oven and let it cool slightly before serving.
Drizzle generously with the tahini (30 g) sauce and garnish the dish with freshly chopped parsley (5 g) – your little moment of pleasure is ready!
