Refreshing Rhubarb Spritzer with a hint of Vanilla - Simple & Homemade

recipe.header.titleBig

A homemade rhubarb spritzer with a hint of vanilla is the perfect refreshment on warm days. As a little 'cooking cat', I love combining the tangy freshness of rhubarb with the delicate, sweet elegance of real vanilla. This drink is incredibly quick to make, free from artificial flavors, and a great, healthy alternative to store-bought sodas. You'll see how easy it is to make a syrup from just a few fresh ingredients that tastes like pure joy. Preparation doesn't take long, and the result is a wonderfully fruity experience in a glass that impresses both visually and in taste. Grab a few stalks of rhubarb and let's whip up this aromatic thirst-quencher together, which is guaranteed to delight your guests – or just yourself!

Ingredients

Rhubarb
250  g
Sugar
100  g
Water
250  ml
Vanilla bean
0.5
Sparkling water
200  ml
Ice cubes
5

Preparation

1

Wash the rhubarb (250 g) thoroughly, trim the ends, and cut into small pieces.

2

Combine the water (250 ml), sugar (100 g), and the seeds of the vanilla bean (0.5) (as well as the pod itself for extra flavor) in a pot and bring to a boil.

3

Add the rhubarb pieces (250 g) to the boiling liquid and let simmer over medium heat for about 10 minutes until the rhubarb is soft.

4

Strain the syrup through a fine sieve, gently press the solids, and let the clear rhubarb syrup cool completely.

5

For one serving, pour about 100 ml of the cooled syrup into a large glass.

6

Fill the glass with sparkling mineral water (200 ml) and stir briefly.

7

Finally, add the ice cubes (5) and enjoy immediately served ice-cold – meow, that's refreshingly delicious!
