Wash the rhubarb (250 g) thoroughly, trim the ends, and cut into small pieces.
Combine the water (250 ml), sugar (100 g), and the seeds of the vanilla bean (0.5) (as well as the pod itself for extra flavor) in a pot and bring to a boil.
Add the rhubarb pieces (250 g) to the boiling liquid and let simmer over medium heat for about 10 minutes until the rhubarb is soft.
Strain the syrup through a fine sieve, gently press the solids, and let the clear rhubarb syrup cool completely.
For one serving, pour about 100 ml of the cooled syrup into a large glass.
Fill the glass with sparkling mineral water (200 ml) and stir briefly.
Finally, add the ice cubes (5) and enjoy immediately served ice-cold – meow, that's refreshingly delicious!
