First, wash, clean, and chop the rhubarb (2) into small pieces.
Peel the ginger (10 g) and slice it thinly or grate it finely to intensify the aroma.
Put the rhubarb (2), ginger (10 g), and water (300 ml) in a small pot and let it simmer for about 10 minutes until the rhubarb is soft.
Let the mixture cool briefly and pour it through a fine sieve to collect the aromatic juice.
Stir the honey (20 g) into the still-warm rhubarb juice immediately so it dissolves perfectly.
Squeeze the juice of the lemon (0.5) fresh and stir it into the rhubarb syrup.
To serve, fill a glass with ice cubes, add the syrup, and top it off with fizzy sparkling water (200 ml) – stir briefly and enjoy!
