Ingredients

fresh raspberries

gin

Preparation

For the syrup, place the fresh raspberries (50 g), sugar (50 g), and water (50 ml) in a small saucepan, bring to a boil and let it simmer until a syrupy consistency is reached, then strain through a sieve and let it cool.

Add the gin (50 ml), fresh lemon juice (20 ml), cooled raspberry syrup (50 g), and the egg white (1) into a shaker.

First shake vigorously without ice so that the egg white emulsifies perfectly – that's my little pro-trick for a particularly thick foam head!

Now add the ice cubes (100 g) to the shaker and shake very vigorously again until the outside of the shaker frosts over.

Strain the finished cocktail through a fine bar strainer into a chilled glass and enjoy immediately.
