Pork neck with rind
300  g
Dark beer

Preparation

Score the rind of the pork neck (300 g) in a diamond pattern with a sharp knife, being careful not to cut into the meat.

Dice the onion (1) and carrot (1) and spread them in an ovenproof dish as a bed for the meat.

Place the roast with the rind facing up on the vegetables and pour the dark beer (150 ml) into the dish, without wetting the rind.

Roast at 180 degrees Celsius until the crackling is crispy.

Meanwhile, for the dumplings, pour lukewarm milk (80 ml) over the bread cubes (100 g) in a bowl and let soak briefly.

Add the egg (1) and soft butter (20 g) to the bread cubes, knead everything into a smooth dough, and form a dumpling.

Cook the dumpling in boiling salted water until it floats to the surface, and serve together with the roast and the gravy made from the pan juices.
