Preparation

First, hard-boil an egg (2), cool it down, and peel it carefully.

Finely dice the onion (1) and sauté in some butter (10 g) until translucent and fragrant.

In a bowl, mix the ground beef (250 g) with the second raw egg (2), breadcrumbs (20 g), chopped parsley (10 g), and the sautéed onions (1) into a smooth dough.

Form a small loaf from the meat mixture, press a well in the center, place the hard-boiled egg (2) inside, and seal it completely with the meat.

Sear the meatloaf in a pan on all sides, then add the beef stock (100 ml) and let it braise over medium heat for about 20 minutes.

Remove the finished meatloaf and reduce the pan drippings with the remaining beef stock (100 ml) to create a fine, creamy sauce.
