North German Red Fruit Pudding (Rote Grütze) with fresh wild berries and liquid vanilla cream - Simple & Traditional

A homemade North German Red Fruit Pudding made from fresh wild berries is the epitome of cozy summer enjoyment. As a hobby cook with a weakness for fine desserts, I can tell you: nothing beats the fruity taste of berries cooked at home, without any artificial additives. This traditional dessert, combined with a velvety, liquid vanilla cream, brings the authentic taste of the North directly into your kitchen. The best part? Preparation is child's play and quick, so you can whip up a healthy and absolutely delicious dessert in no time. For this recipe, we use only fresh seasonal fruit, which we gently cook in its own juice and thicken with a pinch of love and high-quality cornstarch for the perfect consistency. Whether as a light dessert after a hearty meal or a sweet treat in between – this Rote Grütze will delight you! Grab your bowl and try it out right away, because it tastes best when freshly prepared.
Ingredients
Preparation
Wash the mixed wild berries (250 g) carefully and sort them so they go into the pot nice and clean.
Add the sugar (30 g) and most of the water (100 ml) to a small pot and bring everything to a boil.
Dissolve the cornstarch (15 g) in the remaining cold water (100 ml) until smooth, so that no lumps form – that's my little secret for a perfect consistency!
Add the mixed wild berries (250 g) to the pot and let them boil briefly before adding the dissolved cornstarch (15 g) while stirring constantly.
Let the mixture come to a brief boil until it looks glossy, then take the pot off the stove immediately.
For the vanilla cream, mix the cream (50 ml) with the vanilla extract (1 tsp) in a small bowl until it is slightly creamy but still liquid.
Serve the still lukewarm red fruit pudding in a bowl and drizzle the vanilla cream (50 ml) decoratively over it.
