Thoroughly wash the seafood like calamari rings (150 g) and peeled prawns (100 g) and dry them completely with paper towels – this is my most important tip for extra crispiness!
For the batter, whisk the flour (50 g) in a bowl with the ice-cold sparkling water (80 ml) until a smooth coating batter forms.
Heat the olive oil for frying (300 ml) in a deep pan until it starts bubbling immediately during a small batter test.
Dip the seafood portions into the batter and carefully place them into the hot oil until they are golden brown and crispy.
Let the fried pieces drain briefly on paper towels and immediately sprinkle with a pinch of sea salt (1 pinch).
Serve the finished dish with a freshly cut lemon (1) and enjoy the zesty taste.
