First, finely grate the Pecorino (30 g) and finely chop the garlic cloves (2) as well as the parsley (1 bunch).
Lay the beef roulades (2) flat, sprinkle with the cheese, garlic, and parsley, roll them up tightly, and secure with kitchen twine or toothpicks.
Heat the olive oil (2 tbsp) in a pan and sear the roulades on all sides until they have a nice crust.
Coarsely dice the fresh tomatoes (400 g), add them to the roulades, and let everything simmer over low heat for about 40 minutes until the sauce has thickened nicely.
