Soak the gelatin sheet (1) in a bowl of cold water until soft.
Slice the vanilla pod (1) lengthwise and carefully scrape out the aromatic seeds with the back of a knife.
Combine the cream (200 ml), sugar (30 g), and vanilla seeds with the scraped pod in a small saucepan and heat gently; do not let it boil vigorously.
Remove the saucepan from the heat, discard the pod, and squeeze the soaked gelatin sheet (1) well, then stir it into the warm cream until completely dissolved.
Pour the mixture into a pretty glass and let it set in the refrigerator.
For the topping, purée the fresh raspberries (100 g) and press through a fine sieve to remove the seeds.
Pour the fine raspberry purée over the set Panna Cotta and enjoy immediately.
