Silken tofu

Minced pork

Garlic clove

Preparation

First, cut the silken tofu (200 g) into small, fine cubes. Be very careful so it doesn't fall apart – we don't want tofu soup!

Roast the Sichuan peppercorns (5 g) briefly in a pan without oil until they smell fragrant, then crush them finely in a mortar.

Mince the garlic clove (1) and the ginger (10 g) very finely so that the flavor distributes beautifully in the oil later.

Heat some neutral oil in a wok or pan and fry the minced pork (100 g) until crumbly and nicely browned.

Now add the garlic (1), ginger (10 g), and chili paste (15 g) to the meat and sauté briefly.

Deglaze with the soy sauce (20 ml) and add a splash of water before sprinkling in the Sichuan pepper (5 g).

Gently place the tofu cubes (200 g) into the sauce and let them simmer gently on medium heat.

To make the sauce nice and creamy, mix the cornstarch (5 g) with a teaspoon of cold water until smooth and add it to the pan while stirring gently.

For the crowning glory, cut the spring onion (1) into fine rings and sprinkle over your perfectly prepared dish before serving!
