Lightly flatten the pork cutlet (1), season with salt, and bread it sequentially in flour (20 g), a beaten egg (2), and panko breadcrumbs (50 g).
Heat the vegetable oil (100 ml) in a pan and fry the cutlet (1) until golden brown on both sides, then let it drain on paper towels and cut into strips.
Slice the onion (0.5) into fine strips and briefly boil in a small pan with the dashi broth (100 ml), soy sauce (30 ml), and sugar (10 g).
Add the cutlet strips (1) to the pan with the sauce.
