Slice the beef sirloin (200 g) into very thin strips – make sure to cut against the grain so it becomes butter-tender.
For the marinade, whisk the soy sauce (30 ml) with the brown sugar (15 g) in a bowl until the sugar has dissolved.
Finely mince the garlic clove (1) and grate the ginger (5 g), then add both to the marinade.
Slice the spring onion (1) into fine rings and add a portion of them to the marinade.
Let the meat marinate for at least 15 minutes – in the meantime, I’ll clean my paws!
Heat the sesame oil (10 ml) in a hot pan and sear the marinated meat until it is beautifully caramelized.
Finally, sprinkle with sesame seeds (5 g) and garnish with the remaining spring onion rings.
