Wash the chicken leg (1) thoroughly, pat dry, and marinate in the buttermilk (150 ml) for at least an hour to make it tender.
While the chicken is marinating, peel the potato (3), cut into chunks, and boil until soft in salted water.
Drain the cooked potato (3), mash it, and mix with butter (30 g) and milk (50 ml) to create a creamy puree.
Combine flour (100 g), paprika powder (1 tsp), and sea salt (1 tsp) in a bowl.
Take the chicken leg (1) out of the buttermilk (150 ml) and coat thoroughly in the flour mixture.
Heat the sunflower oil (300 ml) in a small pot and deep-fry the breaded chicken leg (1) over medium heat until golden brown and crispy; then drain on paper towels.
For the gravy, sauté some frying fat from the pan with a teaspoon of flour (100 g), then gradually stir in the beef stock (150 ml) and simmer until thickened.
