Beef brisket

Preparation

Preheat the oven to 150°C and rub the beef brisket (400 g) with salt and pepper, then sear in a pan on all sides.

For the BBQ sauce, sauté the finely chopped onion (1) and garlic (2) until translucent, briefly roast the tomato paste (50 g), and deglaze with apple cider vinegar (30 ml) and honey (20 g).

Place the beef brisket in a roasting pan, pour the sauce over it, and braise gently covered for about 3 hours until the meat is butter-tender.

For the cornbread, mix the cornmeal (100 g) with baking powder (5 g).

Stir the egg (1), milk (100 ml), and melted butter (30 g) into the dry ingredients.

Pour the batter into a small mold and bake at 180°C for approx. 20 minutes until golden brown, while the meat rests.
