For the dough, process the flour (250 g) with cold, cubed butter (150 g) and a little sugar (100 g) into a crumbly dough, and chill briefly.
Peel the apples (3), cut them into thin slices, and mix in a bowl with the remaining sugar (100 g) and cinnamon (1 tsp).
Roll out two-thirds of the dough, place it in a small tin, and distribute the apples (3) on top.
Roll out the remaining dough, cut into strips, and lay over the pie as a lattice.
Brush the edges with egg yolk (1) so everything shines beautifully – a little tip from me: it looks fantastic in the oven!
Bake at 180 degrees for about 40 minutes until golden brown and serve warm with a scoop of vanilla ice cream (1 scoop).
