First, pour boiling water over the bulgur (50 g) according to the package instructions and let it soak for about 10 minutes – like a cozy nap in the sun.
Meanwhile, wash the flat-leaf parsley (100 g) and the fresh mint (20 g), shake them dry, and chop them very finely. The finer, the better, purrs the kitchen!
Cut the tomato (2) into small, fine cubes and slice the spring onion (1) into wafer-thin rings.
For the dressing, squeeze the juice of the lemon (1) and mix it well with the olive oil (30 ml) in a small bowl.
Now mix all the prepared ingredients in a bowl and pour the dressing over them. Toss everything gently, let it rest for a moment, and enjoy!
