Ingredients

Ground lamb
200  g
Onion

Bunch of flat-leaf parsley

Ground cumin

Sumac
1  tsp
Olive oil
1  tbsp

Preparation

First, finely dice the onion (1). Set aside half of the onion cubes for the onion topping; we will need the other half for the meat.

Finely chop the parsley (0.5) for freshness.

In a bowl, vigorously knead the ground lamb (200 g) with half of the onion cubes, the chopped parsley (0.5), the cumin (1 tsp), and a pinch of salt (1 pinch).

Shape the meat mixture around wooden or metal skewers to form small, elongated koftas.

Heat the olive oil (1 tbsp) in a grill pan and grill the skewers on all sides for about 8-10 minutes until golden brown.

Meanwhile, mix the remaining onion cubes (1) in a small bowl with the sumac (1 tsp).

Arrange the grilled kofta skewers on a plate, sprinkle with the tangy sumac onions (1 tsp), and enjoy.
