Ingredients

Lamb meat
150  g
Onion

Celery stalk

Lentils

Chickpeas

Tomato paste

Vegetable broth
500  ml
Cilantro

Olive oil

Preparation

First, cut the lamb (150 g) into fine, bite-sized cubes.

Finely chop the onion (1) and the celery stalk (1) – make sure everything is uniform so it cooks perfectly.

Heat the olive oil (1 tbsp) in a pot and sear the meat until browned.

Now add the onion (1) and celery (1), and sauté briefly until fragrant.

Stir in the tomato paste (1 tbsp) and let it caramelize slightly for great depth.

Deglaze with the vegetable broth (500 ml) and add the lentils (50 g) and chickpeas (100 g).

Let the soup simmer gently over medium heat until the meat is tender.

Finally, finely chop the fresh cilantro (10 g) and sprinkle it generously over the steaming Harira just before serving.
